Culinary Intensive - Summer Solstice

I am excited to offer this unique opportunity to work with me in 2018! Throughout the growing season of the upcoming year, I will be leading individuals or couples for 5-day culinary intensives. Set at my home in midcoast Maine, students will join me out in the field and in the kitchen for a custom designed course to help deepen their culinary skills or kick start a new culinary journey. This offering is designed for folks really looking to sharpen their skills and learn to work with the seasons in a more intimate way, ultimately providing themselves and their families with more nutrient dense food to eat and preserve. 

Session #2 ~ Summer Solstice

The seasons move along a bit more slowly in Maine then it does in southern New England and much of the United States. Although June is not bursting with farm crops, there is plenty of wild edibles and selected vegetables to incorporate into our diets. We will spend our time together on the shores of Belfast Bay trying to catch mackerel, on my property collecting milkweed shoots, and out in the woods hoping to find some chicken of the woods. 

Together, I will teach you many techniques that will help you advance in the kitchen, and make your time spent more efficient and enjoyable. We will break down chickens, make medicinal broths, and work on a variety of food preservation methods I find essential for all kitchens. This is the opportunity for you to ask the questions, learn directly, and see how to navigate you kitchen day to day. 


My passion for local sourced and seasonally based ingredients will be the core of this intensive, based in traditional preparations. Learn to keep a sourdough starter, create delicious ferments, make honey wine, and properly utilize a whole chicken. If weather permits, we may find ourselves building bow drill kits from nearby cedar trees, then building a fire to cook the evening meal. See how purposeful preparations connect you to your environment. The purpose of this offering is to help the individual get direct lessons and recipes based on the types of skills you are wanting to learn.
